The 5 superimposed layers: 18/10 stainless steel + 3 layers of aluminum + stainless steel of the Castel'Pro pans allow a homogeneous diffusion of heat throughout the body of the cooking utensil and not only at the level of the thermo-diffuser base. The absence of a base justifies a rapid rise and fall of the temperature and facilitates the cooking of the most technical devices.
